Granola Cups Ingredients: For the granola cups: 2 cups rolled oats 1/2 cup almond flour (or whole wheat flour) 1/4 cup honey or maple syrup 1/4 cup coconut oil (melted) 1 tsp vanilla extract 1/2 tsp cinnamon 1/4 tsp salt For the filling (optional): Greek yogurt, or any plant-based yogurt Fresh berries or other fruit (strawberries, blueberries, kiwi, etc.) Nut butter (optional) Instructions: Preheat the oven : Set your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with paper liners. Mix the granola base : In a large bowl, mix together the oats, almond flour, cinnamon, and salt. Add the melted coconut oil, honey (or maple syrup), and vanilla extract. Stir until everything is well combined and the mixture sticks together.
