Sweet Bean Spread with Tea-Infused French Toast

Ingredients:

  • 1 cup of cooked beans (any type you have, mashed)
  • 1/4 cup of flour
  • 2 tbsp brown sugar
  • 4 slices of bread
  • 1 cup of brewed tea (black or any flavor you like)
  • 1 egg (optional for the French toast batter)
  • A pinch of cinnamon (optional)
  • Butter or oil for frying

Instructions:

  1. Make the sweet bean spread: In a bowl, mash the cooked beans until smooth. Add the brown sugar and flour, mixing well until combined. Adjust sweetness to your taste. Set aside.

  2. Prepare the tea-infused French toast batter: Brew a strong cup of tea and let it cool. In a shallow dish, mix the cooled tea with the egg (if using), a bit of brown sugar, and a pinch of cinnamon.

  3. Dip the bread: Heat a pan over medium heat and add some butter or oil. Dip the slices of bread into the tea mixture, making sure both sides are soaked. Cook the bread in the pan for 2-3 minutes on each side until golden brown and crispy.

  4. Serve: Spread a generous amount of the sweet bean mixture onto the French toast slices. You can sprinkle a bit of extra brown sugar on top for added sweetness.

This dish pairs the earthy sweetness of the beans with the unique flavor of tea-infused French toast for a delightful breakfast or brunch.
