1.Veggie and Spaghetti Stir-Fry
Ingredients:
- 2 cups cooked spaghetti
- 1 onion, thinly sliced
- 1 medium potato, peeled and diced
- 1 avocado, sliced (for serving)
- Olive oil
- Salt and pepper
- Optional: soy sauce, garlic, or any other seasonings you like
Instructions:
Prepare the Potatoes:
- Heat a couple of tablespoons of olive oil in a large skillet or wok over medium-high heat.
- Add the diced potatoes and cook, stirring frequently, until they are golden brown and tender, about 10-15 minutes. Season with salt and pepper.
Add the Onions:
- Add the sliced onions to the skillet with the potatoes. Continue to cook, stirring occasionally, until the onions are softened and slightly caramelized, about 5 minutes.
Stir-Fry the Spaghetti:
- Add the cooked spaghetti to the skillet. Stir well to combine with the potatoes and onions.
- If you’re using soy sauce or other seasonings (like a splash of vinegar or a pinch of chili flakes), add them now. Stir to coat the spaghetti evenly.
Final Touches:
- Cook for an additional 2-3 minutes until everything is heated through and the flavors are well combined.
- Taste and adjust the seasoning with more salt, pepper, or soy sauce as needed.
Serve:
- Transfer the stir-fry to plates or bowls.
- Top with fresh avocado slices for a creamy contrast.
2. Potato & Onion Hash
Ingredients:
- 2 medium potatoes, peeled and diced
- 1 onion, diced
- Olive oil
- Salt and pepper
Instructions:
- Heat a couple of tablespoons of olive oil in a skillet over medium heat.
- Add the diced potatoes and cook, stirring occasionally, until they start to become tender, about 10 minutes.
- Add the diced onion and cook until both the potatoes and onions are golden brown and cooked through.
- Season with salt and pepper. Serve hot.
