Stir-Fried Tofu with Vegetables
Ingredients:
For the Stir-Fry:
- 1 block (14 oz) firm tofu, drained and pressed
- 2 tablespoons vegetable oil or sesame oil
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium carrot, thinly sliced
- 1 cup snap peas or sugar snap peas
- 1 small onion, sliced
- 2-3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
For the Sauce:
- 1/4 cup low-sodium soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1/2 cup vegetable broth or water
- 1 tablespoon sesame oil (optional, for added flavor)
Optional Garnishes:
- Sliced green onions
- Sesame seeds
Instructions:
Prepare the Tofu:
- Cut the pressed tofu into bite-sized cubes.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Add the tofu cubes and cook, turning occasionally, until they are golden and crispy on all sides, about 6-8 minutes. Remove the tofu from the skillet and set aside.
Prepare the Sauce:
- In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and cornstarch until smooth.
- Gradually add the vegetable broth (or water) while continuing to whisk. Set aside.
Stir-Fry the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of oil.
- Add the onions, garlic, and ginger. Stir-fry for about 1-2 minutes until fragrant.
- Add the broccoli, bell peppers, carrots, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
Combine and Cook:
- Return the cooked tofu to the skillet with the vegetables.
- Pour the prepared sauce over the tofu and vegetables.
- Stir everything together and cook for an additional 2-3 minutes until the sauce thickens and coats the tofu and vegetables.
Serve:
- Remove from heat and drizzle with sesame oil if using.
- Garnish with sliced green onions and sesame seeds if desired.
- Serve over steamed rice, quinoa, or cauliflower rice.
Tips:
- Pressing Tofu: Make sure to press the tofu to remove excess moisture. This helps the tofu become crispier when cooked.
- Vegetable Variations: Feel free to add or substitute other vegetables like mushrooms, zucchini, or baby corn.
- Spice It Up: For a bit of heat, add a pinch of red pepper flakes or a splash of sriracha to the sauce.
