Stir-Fried Tofu with Vegetables

 Here's a really good vegan recipe. It's delicious, Simple and very filling. So give it a try.

 


Stir-Fried Tofu with Vegetables

Ingredients:

  • For the Stir-Fry:

    • 1 block (14 oz) firm tofu, drained and pressed
    • 2 tablespoons vegetable oil or sesame oil
    • 1 cup broccoli florets
    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 medium carrot, thinly sliced
    • 1 cup snap peas or sugar snap peas
    • 1 small onion, sliced
    • 2-3 cloves garlic, minced
    • 1 tablespoon fresh ginger, minced
  • For the Sauce:

    • 1/4 cup low-sodium soy sauce
    • 2 tablespoons hoisin sauce
    • 1 tablespoon rice vinegar
    • 1 tablespoon cornstarch
    • 1/2 cup vegetable broth or water
    • 1 tablespoon sesame oil (optional, for added flavor)
  • Optional Garnishes:

    • Sliced green onions
    • Sesame seeds

Instructions:

  1. Prepare the Tofu:

    • Cut the pressed tofu into bite-sized cubes.
    • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
    • Add the tofu cubes and cook, turning occasionally, until they are golden and crispy on all sides, about 6-8 minutes. Remove the tofu from the skillet and set aside.
  2. Prepare the Sauce:

    • In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and cornstarch until smooth.
    • Gradually add the vegetable broth (or water) while continuing to whisk. Set aside.
  3. Stir-Fry the Vegetables:

    • In the same skillet, add the remaining 1 tablespoon of oil.
    • Add the onions, garlic, and ginger. Stir-fry for about 1-2 minutes until fragrant.
    • Add the broccoli, bell peppers, carrots, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  4. Combine and Cook:

    • Return the cooked tofu to the skillet with the vegetables.
    • Pour the prepared sauce over the tofu and vegetables.
    • Stir everything together and cook for an additional 2-3 minutes until the sauce thickens and coats the tofu and vegetables.
  5. Serve:

    • Remove from heat and drizzle with sesame oil if using.
    • Garnish with sliced green onions and sesame seeds if desired.
    • Serve over steamed rice, quinoa, or cauliflower rice.

Tips:

  • Pressing Tofu: Make sure to press the tofu to remove excess moisture. This helps the tofu become crispier when cooked.
  • Vegetable Variations: Feel free to add or substitute other vegetables like mushrooms, zucchini, or baby corn.
  • Spice It Up: For a bit of heat, add a pinch of red pepper flakes or a splash of sriracha to the sauce.
