Granola Cups
Ingredients:
For the granola cups:
- 2 cups rolled oats
- 1/2 cup almond flour (or whole wheat flour)
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil (melted)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
For the filling (optional):
- Greek yogurt, or any plant-based yogurt
- Fresh berries or other fruit (strawberries, blueberries, kiwi, etc.)
- Nut butter (optional)
Instructions:
Preheat the oven:
- Set your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with paper liners.
Mix the granola base:
- In a large bowl, mix together the oats, almond flour, cinnamon, and salt.
- Add the melted coconut oil, honey (or maple syrup), and vanilla extract. Stir until everything is well combined and the mixture sticks together.
Form the cups:
- Scoop the granola mixture into the muffin tin, pressing it firmly into the bottom and up the sides of each muffin cup to form little cups.
- Use a spoon or your fingers to press the mixture firmly so it holds its shape after baking.
Bake:
- Bake the granola cups in the preheated oven for 10-12 minutes, or until golden brown. Keep an eye on them to prevent burning.
- Once baked, remove from the oven and let them cool completely in the pan. They will firm up as they cool.
Add the filling:
- Once the granola cups are cool, carefully remove them from the muffin tin.
- Fill each cup with your desired yogurt or nut butter.
- Top with fresh fruit, berries, nuts, or even a drizzle of honey.
Tips:
- You can make these granola cups ahead of time and store them in an airtight container for up to a week.
- Customize with different fillings such as chocolate chips, seeds, or flavored yogurt!
