Vegan Stuffed Bell Peppers Ingredients: 4 bell peppers, tops cut off and seeds removed 1 cup cooked quinoa or rice 1 can (15 oz) black beans, drained and rinsed 1 cup corn kernels 1 cup diced tomatoes 1/2 cup chopped onions 1 teaspoon cumin 1 teaspoon paprika Salt and pepper to taste Fresh cilantro for garnish Instructions: Preheat the oven to 375°F (190°C). In a large bowl, mix cooked quinoa or rice, black beans, corn, diced tomatoes, onions, cumin, paprika, salt, and pepper. Stuff each bell pepper with the mixture. Place the stuffed peppers in a baking dish and cover with foil. Bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, until the peppers are tender. Vegan Chickpea Curry Ingredients: 1 tablespoon coconut oil 1 onion, diced 2 garlic cloves, minced 1 tablespoon ginger, minced 1 can (14 oz) diced tomatoes 1 can (14 oz) coconut milk 1 can (15 oz) chickpeas, drained and rinsed 1 cup spinach leaves 2 tablespoons curry powder 1 teaspoon cumin Salt and pepper to taste Fresh cilantro for garnish Instructions: Heat coconut oil in a large pan over medium heat. Add onions and cook until translucent. Add garlic and ginger, cook for another minute. Stir in curry powder and cumin, then add diced tomatoes and coconut milk. Simmer for 5 minutes.
