Vegan Lentil Soup


Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 cup green or brown lentils
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened.
  2. Add garlic and cook for another minute.
  3. Stir in lentils, diced tomatoes, vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until lentils are tender.
  4. Remove the bay leaf. Season with salt and pepper.
  5. Garnish with fresh parsley before serving.
