Vegan Lentil Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 cup green or brown lentils
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened.
- Add garlic and cook for another minute.
- Stir in lentils, diced tomatoes, vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until lentils are tender.
- Remove the bay leaf. Season with salt and pepper.
- Garnish with fresh parsley before serving.
