Making muffins is straightforward and versatile. Here’s a basic recipe for classic muffins, with some tips on variations to suit different flavors.

Basic Muffin Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted (or vegetable oil)
  • 2 large eggs
  • 1 cup milk (whole or 2%)
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 375°F (190°C).
    • Line a muffin tin with paper liners or lightly grease it.
  2. Mix Dry Ingredients:

    • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Mix Wet Ingredients:

    • In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract.
  4. Combine Mixtures:

    • Pour the wet ingredients into the dry ingredients.
    • Stir until just combined. The batter will be lumpy; avoid over-mixing to keep the muffins light and tender.
  5. Fill Muffin Tin:

    • Spoon the batter evenly into the muffin cups, filling each about 2/3 full.
  6. Bake:

    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    • The tops should be golden brown.
  7. Cool:

    • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Variations:

1. Blueberry Muffins:

  • Fold 1 cup of fresh or frozen blueberries into the batter before baking.


2. Chocolate Chip Muffins:

  • Stir in 1/2 cup of chocolate chips.

3. Banana Muffins:

  • Replace 1/2 cup of the milk with 1 cup of mashed ripe bananas and add 1/2 teaspoon of cinnamon to the dry ingredients.

4. Nut Muffins:

  • Add 1/2 cup chopped nuts (e.g., walnuts, pecans) or seeds to the batter.

5. Apple Cinnamon Muffins:

  • Fold 1 cup of diced apples and 1 teaspoon of ground cinnamon into the batter.

6. Lemon Poppy Seed Muffins:

  • Add the zest of 1 lemon and 1 tablespoon of poppy seeds to the batter.
