Vegan Stuffed Bell Peppers

Although I have never tried this it was recommended by a very good friend of mine who absolutely loved tis dished so please try it. Feel free to follow me and comment your thoughts.

Vegan Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers, tops cut off and seeds removed
  • 1 cup cooked quinoa or rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup chopped onions
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix cooked quinoa or rice, black beans, corn, diced tomatoes, onions, cumin, paprika, salt, and pepper.
  3. Stuff each bell pepper with the mixture.
  4. Place the stuffed peppers in a baking dish and cover with foil. Bake for 30 minutes.
  5. Remove the foil and bake for an additional 10 minutes, until the peppers are tender.
  6. Garnish with fresh cilantro before serving.
