Vegan Chickpea Curry

 For my vegans I have an amazing chick pea curry recipe that you are sure to love.

1. Vegan Chickpea Curry

Ingredients:

  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup spinach leaves
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat coconut oil in a large pan over medium heat. Add onions and cook until translucent.
  2. Add garlic and ginger, cook for another minute.
  3. Stir in curry powder and cumin, then add diced tomatoes and coconut milk. Simmer for 5 minutes.
  4. Add chickpeas and cook for 10 minutes, until the sauce thickens.
  5. Stir in spinach until wilted. Season with salt and pepper.
  6. Garnish with fresh cilantro before serving.
