For my vegans I have an amazing chick pea curry recipe that you are sure to love.
1. Vegan Chickpea Curry
Ingredients:
- 1 tablespoon coconut oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tablespoon ginger, minced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup spinach leaves
- 2 tablespoons curry powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- Heat coconut oil in a large pan over medium heat. Add onions and cook until translucent.
- Add garlic and ginger, cook for another minute.
- Stir in curry powder and cumin, then add diced tomatoes and coconut milk. Simmer for 5 minutes.
- Add chickpeas and cook for 10 minutes, until the sauce thickens.
- Stir in spinach until wilted. Season with salt and pepper.
- Garnish with fresh cilantro before serving.
