Ingredients:
- 1 cup (200g) sugar (for caramel)
- 1 can (14 oz or 397g) sweetened condensed milk
- 1 can (12 oz or 354ml) evaporated milk
- 4 large eggs
- 1 tablespoon vanilla extract
- Pinch of salt
Instructions:
1. Prepare the Caramel:
- In a medium saucepan, add the sugar and heat over medium heat.
- Stir constantly until the sugar melts and turns a deep amber color. Be careful not to burn it.
- Once melted, quickly pour the caramel into a flan mold or individual ramekins, tilting the mold or ramekins to evenly coat the bottom with the caramel. Set aside to let it harden.
2. Prepare the Flan Mixture:
- Preheat your oven to 350°F (175°C).
- In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, and a pinch of salt.
- Blend until smooth and well combined.
3. Pour and Bake:
- Pour the flan mixture over the hardened caramel in the mold or ramekins.
- Place the mold or ramekins in a larger baking dish. Fill the larger dish with hot water until it reaches halfway up the sides of the mold or ramekins (this is a water bath or "bain-marie").
- Carefully place the dish in the preheated oven.
- Bake for 50-60 minutes or until the flan is set and a knife inserted in the center comes out clean.
4. Cool and Serve:
- Remove the flan from the oven and let it cool to room temperature.
- Once cooled, refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.
- To serve, run a knife around the edge of the flan to loosen it, then invert it onto a serving plate so that the caramel is on top.
