Flan

 Flan is a delicious, creamy dessert that is popular in many parts of the world, especially in Latin America and Spain. Here's a classic recipe for making flan:

Ingredients:

  • 1 cup (200g) sugar (for caramel)
  • 1 can (14 oz or 397g) sweetened condensed milk
  • 1 can (12 oz or 354ml) evaporated milk
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • Pinch of salt

Instructions:

1. Prepare the Caramel:

  • In a medium saucepan, add the sugar and heat over medium heat.
  • Stir constantly until the sugar melts and turns a deep amber color. Be careful not to burn it.
  • Once melted, quickly pour the caramel into a flan mold or individual ramekins, tilting the mold or ramekins to evenly coat the bottom with the caramel. Set aside to let it harden.

2. Prepare the Flan Mixture:

  • Preheat your oven to 350°F (175°C).
  • In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, and a pinch of salt.
  • Blend until smooth and well combined.

3. Pour and Bake:

  • Pour the flan mixture over the hardened caramel in the mold or ramekins.
  • Place the mold or ramekins in a larger baking dish. Fill the larger dish with hot water until it reaches halfway up the sides of the mold or ramekins (this is a water bath or "bain-marie").
  • Carefully place the dish in the preheated oven.
  • Bake for 50-60 minutes or until the flan is set and a knife inserted in the center comes out clean.

4. Cool and Serve:

  • Remove the flan from the oven and let it cool to room temperature.
  • Once cooled, refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.
  • To serve, run a knife around the edge of the flan to loosen it, then invert it onto a serving plate so that the caramel is on top.
