Easy Egg Fried Rice

This Fried Rice recipe is sure to be a staple at your household after you've tried it. 

Ingredients (2–3 servings):

  • 2 cups cooked rice (preferably a day old, cold rice works best)

  • 2 tablespoons vegetable oil (or sesame oil for more flavor)

  • 2 eggs, lightly beaten

  • 1 cup mixed vegetables (carrots, peas, corn, or bell peppers)

  • 2 green onions, chopped (optional)

  • 2–3 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional, for richer taste)

  • 1 teaspoon garlic, minced

  • ½ teaspoon ginger, grated (optional)

  • Salt & pepper to taste

(If you want it non-veg: add chicken, shrimp, or beef strips; for vegetarian/vegan: keep it with veggies or add tofu.)


Instructions:

  1. Prepare the Rice

    • Use cold, leftover rice (fluffy and not sticky). If using fresh rice, spread it out to cool before frying.

  2. Cook the Eggs

    • Heat ½ tablespoon oil in a large pan or wok.

    • Scramble the eggs until just cooked, then remove and set aside.

  3. Sauté Vegetables

    • Add another tablespoon of oil.

    • Toss in garlic (and ginger, if using) and stir for 30 seconds.

    • Add your mixed vegetables and stir-fry for 2–3 minutes.

  4. Add Rice

    • Push veggies to the side of the pan.

    • Add the rice, breaking up clumps. Stir well to combine.

  5. Season

    • Pour in soy sauce (and oyster sauce if using).

    • Stir-fry everything together until the rice is evenly coated.

  6. Add Eggs & Finish

    • Return the scrambled eggs to the pan.

    • Mix well and cook for another 1–2 minutes.

    • Taste and adjust seasoning with salt, pepper, or more soy sauce.

  7. Serve Hot 🥢

    • Garnish with chopped green onions or sesame seeds.
