Easy Egg Fried Rice

 Fried Rice This Fried Rice recipe is sure to be a staple at your household after you've tried it.  Ingredients (2–3 servings): 2 cups cooked rice (preferably a day old, cold rice works best) 2 tablespoons vegetable oil (or sesame oil for more flavor) 2 eggs, lightly beaten 1 cup mixed vegetables (carrots, peas, corn, or bell peppers) 2 green onions, chopped (optional) 2–3 tablespoons soy sauce 1 tablespoon oyster sauce (optional, for richer taste) 1 teaspoon garlic, minced ½ teaspoon ginger, grated (optional) Salt & pepper to taste (If you want it non-veg: add chicken, shrimp, or beef strips; for vegetarian/vegan: keep it with veggies or add tofu.)
