Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs (about 10-12 full sheets)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice (freshly squeezed, or bottled if not available)
  • 1 tablespoon lime zest (optional, for extra flavor)

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C).
  2. Make the Crust:

    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.
    • Mix until the crumbs are evenly coated with butter.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
    • Bake the crust for 8-10 minutes, until lightly browned. Remove from the oven and let it cool while you prepare the filling.
  3. Prepare the Filling:

    • In a large mixing bowl, whisk the egg yolks until they are light and creamy.
    • Gradually add the sweetened condensed milk and whisk until smooth and thickened.
    • Stir in the key lime juice and lime zest (if using) until well combined.
  4. Bake the Pie:

    • Pour the filling into the cooled graham cracker crust.
    • Bake the pie for 15 minutes, or until the filling is set but still slightly jiggly in the center.
    • Remove the pie from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 2 hours, or until fully chilled.

    • In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
