Fresh Spring Rolls Recipe

 



Ingredients:

For the Rolls:

  • 10-12 rice paper wrappers (available at most Asian grocery stores)
  • 1 cup shredded lettuce or cabbage
  • 1 cup cooked rice noodles (vermicelli or thin rice noodles)
  • 1 cup julienned carrots
  • 1 cup thinly sliced cucumber
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup cooked shrimp, chicken, or tofu (optional, if using tofu, make sure it’s well-seasoned)
  • 1 avocado, sliced (optional)

For the Dipping Sauce:

  • 1/4 cup hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon water
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar (optional)
  • 1-2 tablespoons crushed peanuts (optional, for garnish)

Instructions:

  1. Prepare the Filling Ingredients:

    • If using rice noodles, cook them according to package instructions, then drain and set aside.
    • If using shrimp, chicken, or tofu, cook them as needed and cut them into thin strips or bite-sized pieces.
    • Wash and dry the fresh herbs.
  2. Prepare the Rice Paper Wrappers:

    • Fill a large bowl with warm water (not hot, as it can make the wrappers too soft).
    • Dip one rice paper wrapper into the warm water for about 5-10 seconds, or until it becomes soft and pliable. Be careful not to soak it too long, or it may tear.
    • Gently lay the softened wrapper flat on a clean surface, like a cutting board or a plate.
  3. Assemble the Spring Rolls:

    • Place a small amount of shredded lettuce or cabbage in the center of the wrapper.
    • Add a few cooked rice noodles on top.
    • Layer on julienned carrots, cucumber slices, fresh mint, cilantro, and any optional ingredients like avocado slices or protein.
    • Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom. Make sure the roll is snug but not too tight, to prevent tearing.
  4. Make the Dipping Sauce:

    • In a small bowl, mix together the hoisin sauce, rice vinegar, water, sesame oil, and sugar (if using). Adjust to taste if needed.
    • Sprinkle crushed peanuts on top if desired.
  5. Serve:

    • Arrange the spring rolls on a plate or serving tray.
    • Serve with the dipping sauce on the side.

Tips:

  • Keep a damp cloth over the rice paper wrappers while you work to prevent them from drying out.
  • Customize the fillings based on your preference or what you have on hand. Other options include bell peppers, bean sprouts, or cooked mushrooms.
  • If you’re making these in advance, cover the rolls with a damp cloth or plastic wrap to keep them from drying out.
