Creamy Garlic Parmesan Chicken Pasta

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz. pasta (fettuccine or penne works well)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Season the Chicken:

    • Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  2. Cook the Chicken:

    • Heat the olive oil in a large skillet over medium heat.
    • Add the chicken breasts and cook for about 6-7 minutes per side, until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  3. Cook the Pasta:

    • While the chicken is cooking, bring a pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  4. Prepare the Sauce:

    • In the same skillet where you cooked the chicken, add the minced garlic and sauté for about 1 minute until fragrant.
    • Pour in the chicken broth and heavy cream. Stir and let it simmer for about 5 minutes, allowing the sauce to thicken slightly.
  5. Add the Parmesan:

    • Stir in the grated Parmesan cheese until the sauce becomes creamy and smooth. If the sauce is too thick, you can add a little more chicken broth or cream to reach your desired consistency.
  6. Combine:

    • Slice the cooked chicken breasts into strips and return them to the skillet. Add the cooked pasta as well.
    • Toss everything together until the chicken and pasta are well-coated with the sauce.
  7. Serve:

    • Garnish with fresh parsley if desired, and serve hot.
