Classic Vanilla Ice Cream Recipe

 

Ingredients:

  • 2 cups (480 ml) heavy cream
  • 1 cup (240 ml) whole milk
  • ¾ cup (150 g) granulated sugar
  • 1 tablespoon vanilla extract
  • A pinch of salt

Optional:

  • ¼ cup (60 ml) milk or cream (for adjusting consistency)
  • Mix-ins like chocolate chips, fruit, or nuts (added during the last few minutes of churning)

Instructions:

1. Prepare the Ice Cream Base:

  1. Mix Ingredients:

    • In a medium bowl, whisk together the sugar and salt.
    • Add the milk and whisk until the sugar is fully dissolved.
  2. Add Cream and Vanilla:

    • Stir in the heavy cream and vanilla extract until well combined.
  3. Chill:

    • For best results, cover the mixture and refrigerate for at least 1-2 hours, or until it is very cold.

2. Churn the Ice Cream:

  1. Prepare Ice Cream Maker:

    • If using an ice cream maker, ensure the bowl is completely frozen if it’s a type that requires pre-freezing. Follow the manufacturer’s instructions.
  2. Churn:

    • Pour the chilled ice cream base into the ice cream maker. Churn according to the manufacturer’s instructions. This typically takes 20-30 minutes. The ice cream is ready when it has thickened and has a soft-serve consistency.
  3. Add Mix-ins:

    • If adding mix-ins, do so during the last 5 minutes of churning. This could include chocolate chips, chopped fruit, or nuts.

3. Freeze:

  1. Transfer to Container:

    • Transfer the churned ice cream to an airtight container.
  2. Freeze:

    • Freeze the ice cream for at least 2-4 hours, or until it is firm and scoopable.

4. Serve:

  1. Scoop:

    • Allow the ice cream to sit at room temperature for a few minutes to soften slightly before scooping if it’s too hard to scoop.
  2. Enjoy:

    • Serve in bowls or cones and enjoy!

Variations:

  • Chocolate Ice Cream: Add ½ cup of unsweetened cocoa powder to the sugar and salt mixture, or melt 4 oz of semi-sweet chocolate and mix it into the base before chilling.

  • Strawberry Ice Cream: Blend 1 cup of fresh or frozen strawberries and mix it into the chilled base before churning. You can also add a bit of lemon juice to enhance the flavor.

  • Mint Chocolate Chip Ice Cream: Add 1 teaspoon of peppermint extract to the base and mix in ½ cup of chocolate chips during the last few minutes of churning.
